Angel Cake is a famous American dessert with a texture and lightness similar to a sponge, a cake without any fat prepared only with egg whites, sugar, vanilla extract and flour. The angel cake is ideal to prepare when you have many egg whites to reuse and you want an easy and light dessert, it can be served simply with a sprinkling of icing sugar, garnished with fruit or whipped cream, or be used as a base for making a cake as the Americans do. I prepared the angel cake after Easter to reuse all the egg whites left over from the preparation of the pastiera and garnished it with black cherries in syrup that gave an extra touch to the dessert, the recipe I took from the very American joyofbaking which is my bible for american sweets, I used the typical mold with the opening bottom, but a simple high-sided donut mold is also enough. How to make angel cake

Pour the egg whites at room temperature in a dry bowl and whisk them until stiff peaks.

Add the cream of tartar, lemon juice, vanilla extract and salt and continue whipping
Gradually add the sugar, one spoonful at a time, continuing to work with the whisk

Sift the flour over the egg whites and pour it in 4 times, gently incorporating it into the egg whites mixture with a wooden spoon this time.

Pour the mixture into an un-buttered donut mold and level the top of the angel cake

Bake in a preheated oven for about 40 - 45 minutes at 180 °

Immediately after removing the angel cake from the oven, turn the mold upside down and let the cake cool upside down for 1 hour.

When it is completely cold, remove the edges of the cake from the mold with the help of a spatula and turn the cake upside down on a serving dish.

Decorate the angel cake with powdered sugar, whipped cream or fruit, cut into slices and serve
